Michelle at Healthy Helpings has done an episode on cooking kebobs with kids.
I don’t know about your house, but in ours, food-on-a-stick is usually a big hit. Michelle’s recipes are inventive and flavorful. My son has a peanut allergy, so I’ll be replacing the peanut butter in the chicken marinade with sunflower-seed butter. I can’t wait to try the pineapple/banana kebobs, but I wonder what I could use instead of the almond meal… any suggestions?

A substitute for almond meal? Try this: gently (GENTLY!) pulse roasted soy-nuts in a food processor, then mix in a small amount (to taste) of your sweetener of choice.
Be careful, though or you’ll end up with soynutbutter!
Thanks!
